Riverhorse Team Opens Salt Box eatery & catering in Prospector

Long a Main Street mainstay, the team behind Riverhorse on Main and Riverhorse Provisions is branching out with Salt Box, a dedicated hub for its catering service and grab-n-go eats in the Prospector neighborhood. Salt Box Eatery and Catering will allow the catering business to grow, while serving up coffee, reasonably priced eats, and a few takeaway items from its cafe space. 

Many knew the Salt Box’s location as Good Karma, an Indian restaurant, and it was chosen by Riverhorse’s team for its large kitchen. “We completely remodeled it,” says Casey Adams, a partner and interior designer of Salt Box. “We wanted to have a catering kitchen location because we’re trying to grow that side of the business for Riverhorse.”

With the catering operation quickly outgrowing Riverhorse and Provision’s kitchens, this new, larger space will be the central hub for creating cuisine for large weddings, small home parties, and everything in between. 

“We cater for anything,” Adams says. “We’ve catered everything from funerals to Super Bowl parties to high-end weddings. Even a 20-person champagne brunch.”

You can also place a catering order for pickup, drop-off, or delivery and your food will be prepared at Salt Box for your event or occasion. For pre-ski meals, office lunches, or meals you can enjoy at home, visit the grab-n-go section or order from the small, but robust, menu of fresh Riverhorse eats.

“We have our own juices that we bottle, and we make our own breads and all of our pastries,” says Adams. “All the grab and go is things like a broccoli salad, pasta salad, wraps, and yummy salads to go. We’ll have a Huevos stack box and breakfast box as a play on the Salt Box terminology.”

While Provisions on Main Street is more of a grocery store with a small cafe, Salt Box is more a cafe with takeaway snacks, bites, and meals. It also serves coffee and espresso drinks alongside the fresh-made pastries. You’ll find canned and bottled drinks, CBD sodas, fresh fruit, and chips for purchase in the coolers.

Salt Box is a chef-driven entity with Seth Adams at the helm as executive chef. He’ll be working together with catering chef Jimmy Bell as well as Mark Peterson and Ryan Williams to make this concept happen and succeed. 

Taste the fruits of their labors on Salt Box’s in-house menu. Order the filling Salt Box egg sandwich, made with housemade ciabatta, scrambled egg, honey baked ham, and honey sriracha cream cheese, for a hearty breakfast. Try the healthy Keto Box or vegetarian falafel bites for lunch.

Salt Box’s airy space has been completely renovated too. And after designing both Riverhorse on Main and Riverhorse Provisions, Adams loved envisioning and creating this fresh, bright space. 

“It’s not on Main Street, it’s off the beaten path, which is nice,” she says. “It has a cozy couch, spots to sit, and a nice big deck where we’ll be doing brunches when the weather’s warm.”

Due to COVID-19, the indoor seating Salt Box has is further reduced, but this cozy area is a great spot to dine or sip coffee with a friend or coworker. Once summer comes, don’t miss patio brunches (hopefully) paired with mimosas—if a liquor license can be obtained.
